Starfruit have 5 ridged egdes and when sliced crossways, the slices are perfect star shapes, hence the name, starfruit. When picked before being fully ripe, the fruits are firm and green with a crisp citrus like flavour. At this stage they are used for salads and stir fries.
If left to ripen fully, the starfruit change to a bright yellow colour and soften. Once ripe, the starfruit have a sweeter flavour and are then best either juiced or eaten raw out of hand. Starfruit are also often used for decorative purposes.
